Venue preset

When the state-school calendar is enabled in Site profile, school authority is resolved from the saved postcode and is read-only here. Curve points and base modifier values are code defaults in v1.
State-school calendar is off. Bank holidays still apply automatically.

Kitchen / food-service times

Kitchen demand uses the saved food-service sessions, including split lunch and evening service. Review these whenever service times change.

Minimum staffing floors

Minimum shift lengths

Defaults are 3 hours for FOH and 4 hours for Kitchen. These are operational rules, not contracted minimum hours.

Labour costs

Derived from active staff average hourly rates. Manager uses staff marked as manager.

Budget basis

Labour % and predictive budget comparisons use net sales by default.

Demand smoothing

Applied after raw SPLH demand and before final required heads across predictive, rota, and rebalance views.

SPLH overrides

Priority is bucket override → site override → learned adjustment → default curve.
